Brew it right.

Ratio
Weigh it. About 1:16 coffee to water — roughly 15 g per 250 ml cup — is the place to start.

Grind
Match the grind to the method: finer brews faster, coarser slower. Grind right before you brew.

Water
Filtered water, just off the boil (195–205°F). It’s most of your cup, so it matters.

Freshness
Brew within weeks of the roast date and grind at the last minute. Fresh is the whole point.

Step by step
Heat water to about 200°F and rinse the paper filter so it does not flavor the cup.
Add the grounds, level the bed, and zero your scale.
- Time: 0:00–0:45
Bloom: pour twice the coffee's weight in water and wait 30–45 seconds.
- Time: 0:45–2:30
Pour in slow spirals, keeping the bed even, until you reach your target weight.
- Time: 2:30–3:30
Let it draw down to a flat, even bed — about 3–4 minutes from the first pour.
